I have been LIVING for all of this soccer lately. You’ve got the USMNT in Copa America and, my favorites, Die Mannschaft in Euro Cup. Plus there are the regular season NWSL games and USWNT friendlies going into the Olympics. It’s a great time to be a football fan.

Sunday was Germany’s first group stage game of the tournament so naturally I went all outfor it. I wore my (4-star, World Cup Champion) jersey all around town and went and got German beer (Hofbräu Dunkel). I didn’t have time before the game for the Veganerwurst I usually get from a local hotdog restaurant, but it was with me in spirit. My ancestors are predominantly German on both sides so with my naturally blonde hair and blue eyes, a friend of mine jokingly calls me a Bavarian Princess; I’ve really taken that and run with it 😉 Germany pulled off the win with some great saves from one of my faves, Neuer, and a beautiful late goal from my other fave, Schweinsteiger. I could talk about German football all day so I’m going to get back to the task at hand now…..
Monday was my second “weekend” day so I spent almost the whole day running errands. I’ve found that adulthood is just a series of crossing things off a to-do list in order to cross other things off of said list. For example, I need to order new contacts, but before I can do that, I have to see my eye doctor for a new prescription, which means scheduling and going to the appointment. It can easily get overwhelming, especially when those “depression days” come through. I’m so thankful that I’ve come a long way in my treatment though or I definitely wouldn’t have the energy for doing everything I needed and wanted to.
Anyway, back to
Monday. I did meet a coworker and friend for lunch, which is always a nice mental break from the need to be productive. After all of my errands, I decided to make a recipe I’d found online for a cauliflower pizza casserole. I’m still learning to like a number of vegetables so sometimes I treat myself like a picky child and find recipes that “hide” vegetables. This one was easy to make and allowed some substitutions/tweaking; I added sauce (that I seasoned myself…with maybe a little too much garlic since I’m still sweating it out this morning) and peppers instead of pepperoni. I think next time I’d add mushrooms and black olives and – a phrase I never thought I’d say – use less cheese, but it was good enough this time that it disappeared in all of 10 minutes.
We’re already coming up on day 30 of this challenge, and although a lot of my adventures lately have been smaller and more practical, there are some bigger, fun things on the horizon! Stay tuned 🙂
